Verdicchio di Matelica La Monacesca is the winery's most representative interpretation of Verdicchio in Matelica. It requires a minimum amount of ageing to fully express its potential and be appreciated as a wine of remarkable aromatic complexity, with notes of anise, citron, and dried fruit. It is extremely powerful and richly structured on the palate, with a deep, long finish and a persistent finish. Harvested by hand and immediately, the grapes are gently pressed without the use of sulfur dioxide. Fermentation takes place in stainless steel for approximately 12-15 days at a controlled temperature of around 20°C. It ages on the fine lees until the following spring. Malolactic fermentation begins naturally in late spring. Released one year after harvest.
