The Torbato Terre Bianche ''Cuvée 161'' Sella & Mosca undergoes pre-fermentation maceration at 10°C for 24 hours, soft pressing of whole and destemmed grapes, cold static decantation and fermentation in stainless steel at a controlled temperature of 18°C. It ages partly in steel on the lees for 6 months while 15% ages in barrique.
