Vallombrosa Gin is made within the walls of the Vallombrosa Abbey in Tuscany, home to Benedictine monks who, among other things, produce liqueurs and spirits. Among these, Dry Gin stands out, crafted from a selection of single-variety juniper, which grows only between the Sansepolcro and Pieve Santo Stefano areas. Other botanicals are then added, faithfully following a recipe passed down through the centuries by the monks, who oversee every stage of the distillation process.

Vallombrosa Gin is produced in the Abbey of the same name, built in 1028 by Saint John Gualbert, who founded the Benedictine Congregation of Vallombrosa in the Tuscan-Emilian Apennines, at an altitude of 1,000 meters, surrounded by a forest of ancient trees. The abbey is also famous for its homemade honey, chocolate, herbal preparations for face and body care, liqueurs, and bitters distilled from a variety of herbs. Vallombrosa Dry Gin is made exclusively from a wild variety of juniper berries that grow on the hills between Sansepolcro and Pieve Santo Stefano, in the province of Arezzo. The high aromatic concentration found in this plant ensures its use in single-variety distillation with excellent results, so much so that some Anglo-Saxon breeders have selected some samples to produce Single Estate Gins produced using the cold compound technique.
