Gin Ki No Bi is a Kyoto Dry Gin made using a rice spirit as a base and an exclusive selection of botanicals: yellow yuzu, Japanese cypress, red shiso leaves, bamboo, gyrokuro tea from the Uji region, and Japanese peppercorns. Fushimi water, known for its purity, is then used to blend the distillate.

Gin Ki No Bi is a Kyoto Dry Gin. The various botanicals are divided into six different categories: base, citrus, tea, herbs, spices, and flowers. They are then distilled separately and reassembled. The distillery has two German pot stills: a 140-liter still with an integrated basket for the botanicals and a 450-liter swan-neck still. The different shapes and sizes allow each botanical to be treated individually, thus extracting only the finest flavor from each ingredient.
