The Fiano di Avellino 'Ciro 906' by Ciro Picariello is produced in Summonte. The grape variety is 100% Fiano di Avellino. The grapes are hand-picked and undergo a rigorous selection in the cellar, where they are pressed directly. The must is cooled to 8°C for 24 hours. Fermentation is always controlled at around 12–13°C for 60 days. The wine is aged in stainless steel tanks with frequent batonnages for 12 months. It is then bottle-aged for 6 months before being released for sale.
