The Trasimeno Fagiolina is a tiny bean with ancient origins, now a Slow Food Presidium. It is grown exclusively in the areas around Lake Trasimeno, and all operations—from sowing to harvesting to threshing—are still carried out entirely by hand. It has a thin skin. It is tender, buttery, and particularly flavorful. Compared to regular beans, the Fagiolina has a 5–15% higher protein content and 30–50% more fiber. Also rich in zinc, selenium, and vitamin B3, this legume makes a valuable contribution to our diet.
