The Taittinger 'Cometes de Champagne' Blanc de Blancs is made entirely from Chardonnay from the finest vineyards in the prestigious Côte des Blancs. Five percent of the wines used are aged for four months in new oak barrels. The wine ages slowly and patiently for eight to ten years in the chalk pits of Saint-Nicaise (Crayères).

The Taittinger 'Cometes de Champagne' Blanc de Blancs Champagne is produced in the cellars of the former 13th-century Saint-Nicaise Abbey in Reims, where it receives all the care and attention necessary to reach its maturity. The cuvée is composed entirely of Chardonnay from the finest vineyards in the prestigious Côte des Blancs. It is only produced when the harvest is of exceptional quality, worthy of a vintage. Five percent of the wines used to make it are aged for four months in new oak barrels (a third of which are renewed annually), enhancing the intrinsic qualities and complexities of the final blend. Only after slow and patient aging for eight to ten years in the chalk pits of Saint-Nicaise (Crayères) does this exceptional cuvée come to life.
