Extra Brut Champagne is made with 60% Pinot Noir and 40% Chardonnay from 23 crus: primarily Aÿ, Verzenay, Bouzy, and Tauxières for the Pinot Noir, and Cramant, Le Mesnil-sur-Oger, Oger, and Cuis for the Chardonnay. The blend is 71% Grand Cru and 29% Premier Cru. Only the finest vintage Champagnes become Bollinger 'R.D.' A very long maturation process, more than three times longer than required by the appellation, yields an infinite array of flavors: a true alchemy of sensations.
