La Maison Bollinger, fondata nel 1829, si trova ad Ay, nelle vicinanze di Epernay e proprio ai piedi della Montagne de Reims. E' rimasta una delle quattro maison che possiamo definire ancora "indipendenti", che ovvero vantano una produzione figlia di ettari di proprietà, in questo caso quasi 165, il cui circa 80% è rappresentato da Grand Cru e Premier Cru. Nella produzione trovano spazio Pinot Noir, Pinot Meunier e Chardonnay, valorizzati maggiormente da scelte in cantina che tendono in alcuni casi più alla tradizione che all'innovazione, non tralasciando pur tuttavia un equilibrio tra le parti.
La Maison Bollinger è indubbiamente una delle più amate e unanimemente riconosciute come punto di assoluto riferimento nel panorama dello Champagne di eccellenza, testimoniato dall'elevatissima qualità di tutti i suoi prodotti, millesimati e non.
